Canards Rotis, Roasted Ducks

Les canards rotis de Cheh Ong sont celebres et delicieux.
Chef Ong roasted ducks are famous and delicious.
C'est un regal a regarder nos deux marmitons cuisiner les nouilles sautees et les riz frits.
These cooks are friying rice, called in malais Nasi Goreng, or Mee goreng for noodles.
Le canard est coupe en petites bouchees, la peau est grillee, c'est ce que prefere mon petit Nicolas, la chair est douce est gouteuse, c'est un delice de la manger accompagnee de Mee Goreng, (ou de salade pour la grand mere!)

Je ne suis pas fan de canard mais je l'aime a la manière asiatique bien roti bien gouteux mais je n'aurais pas mangé la salade mais des pates cuites come il s font là plus haut... Que veux tu si j'étais là bas je ne e priverai de rien...

So they are roasted with the head still on? I have only had duck a few times. One was a wild duck shot by a hunter and tasted horrible - very fishy. I had a beautiful duck at a restaurant which has long since closed down. I would try one of these ducks gladly.

I've had duck many times, but 3 times in my life really stand out.

The first was at a Chinese restaurant in San Francisco that was top notch. It was a hole in the wall place and the place was old and wasn't attractive at all but the duck was excellent, marinated in Hoison sauce.

The second was at a Thai restaurant in Santa Barbara, California. It was very sweet. Not sure the spices but wow!

The third was with my hunting partner. He has a Thai wife and cooked one of the ducks he shot perfectly. I don't like dry duck. It had the right amount of wetness. I'm not sure what she cooked it in, but it was fabulous.
