Summer recipes Recettes d'été

Verrine à la truite fumée pour quatre personnes
Smoked trout glass bowl, for 4 persons



Fromage blanc allégé, 8 cuillérées, 8 spoons of light cream cheese,
Un petit pot de Tarama, a small tarama bowl,

Un sachet de truite ou de saumon fumé, smoked salmon or smoked trout,
Un concombre, a cucumber, or two tomatoes,


Mélanger le tarama au fromage blanc, ajouter un peu de Tabasco ou des épices au choix.

Mix together tarama and cream cheese, you may add some tabasco, or any spice you like,

Disposer le mélange dans le fond de la verrine, put it first in the glass bowl,
Découper au ciseau la truite ou le saumon fumé en fines lanières, enlever les parties brunes.

Slice the slamon or the trout in thin strips,
On peut assaisonner les lanières de truite avec un filet de citron, ou un peu de crème fraîche allégée, ou de la sauce soja, ou tout autre ingrédient au choix, ou bien les laisser tel quels.

You may add some soja sauce, or lemon juice or whatever you like.

Disposer les lanières sur la première couche, you then add the salmon as a second layer,
Découper un concombre en petits dés, et le faire dégorger pendant une heure avec du gros sel,

Cut the cucumber in small cubes, season it, mix it with small pieces of black olives.

Mélanger les dés de concombre avec des petits morceaux d’olives noires.
Garnir le dessus de la verrine avec le concombre.

Add the third layer of cucumber, put it in the fridge for some time, (or tomato cubes)
Servir très frais avec du pain aux noix ou aux céréales.
Serve with fresh baguette.

Pour la fête des marches, c'est monsieur Garden qui fait les desserts.

Pêches Melba, is it Melba Peach in English?

Au fond, une belle cuillèrée de confiture de myrtilles,

deux oreillons de pêches au sirop coupés en morceaux,
puis, deux boules de glace à la vanille,
un peu d'amandes effilées,
terminer par une énorme couche de Chantilly en bombe,
et décorer avec encore des amandes effilées.

Il met beaucoup de Chantilly parce que lui, il adore ça, mais on peut en demander moins.


A big spoon of blueberry jam,
two scoops of vanilla ice cream,

Two peach halves cut in small pieces,
and a huge amount of Chantilly cream spray, whipped cream, (as Jeannie says)
you put some minced almonds on the top as decoration.

Ok, Mr Garden uses a lot of this Chantilly cream spray (whipped cream), because it is his favorite, you can ask for less if ever you're watching your weight.

One question is the Salmon or trout cooked first?? I am not into raw fish?? LOL.. Sorry had to ask. And that desert looks really Yummie..

I had to look up a few of the ingredients.

Like Tarama (sounds kind of yucky but I would try it at least)

I've never seen smoked trout - at least not shaved thin like smoked salmon (only whole with the skin and eyes still on and only up north)

And alas, Gary is allergic to cucumber so I won't be trying this one soon. I know my Graeme would love it.

I was pleased to find that Chantilly cream is just how I happen to make my whipped cream.

And Myrtilles jam is blueberry! Yum!
I think this is Blueberry Parfait.

In English it is still Peach Melba (because it is really French anyway) but it would have peaches in it too wouldn't it?

My son would love that fish with the cream cheese. I'm going to make it for him..if he cleans his room.

yes of course, there is peaches in peach Melba.
You may add tomato cubes instead of cucumber on the top layer for the entrée.
Tweets, it is smoked salmon or trout very thinly sliced, I thought you could find them everywhere, not whole with their eyes still on, lol.

I think you can here but I have never looked because I dont eat fish but I was just wondering if it was cooked or not. LOL... Silly me..

Mmmmh, j'ai faim! I'll certainly try the first recipe though I don't know tarama and I'm not sure whether I'll get it here. We have fish for dinner tonight and so I'll change the recipe a little. Un grand merci pour nous avoir donné cette recette!
